We are not a dry house. Each property keeps a short cellar of low-intervention wines — biodynamic growers, old vines, nothing industrial — poured deliberately and never by default. Pairings accompany the chef's table; abstinence is honoured without comment.

For guests on the Nutrition & Reset program — or anyone who asks — the kitchen runs a parallel detox sequence: broths, raw plates, herbal infusions and a hard sunset on the kitchen. No juices pretending to be meals; just food that asks very little of you for a few days.
